St. Joseph's Home Sale Beer A Belgian Saison 5 gallons. Grains: 0.5 lbs. American Vienna Malt 1 lb. German Light Wheat Malt Extract & Adjunct: 6 lbs. Light Dry Malt Extract 1 lb. Dextrose Hops: 1.5 oz. Styrian Golding pellets, 5.25% AAU @ 60 minutes 0.5 oz. Kent Golding plug, 4.75% AAU @ 15 min. 1.25 oz. Kent Golding pellets @ 5 min. 0.5 oz. stale Northern Brewer leaf hops from my garden, for dry hopping. Yeast: Wyeast 1388 Belgian Strong Ale in "smack pack" Also: 0.5 oz. Curacao bitter orange peel Kaffir Lime leaves, small bag 1 Fatali chile pepper, frozen. Irish Moss for fining. Brewday: Feb. 12, 2006 Grains were steeped for 20 minutes at 160F, then sparged into the brewpot. Added extract, sugar and Styrian hops, brought to boil. Added orange peel and lime leaves with the Kent hops at 15 min. left. Primary ferment: 14 days. Transferred to glass carboy. Added a muslin bag of Northern Brewer hops from my garden, the last of the season, with mostly brown leaves to match the "stale" hops of Belgian beers. Secondary ferment: 35 days. Primed with 3/4 cup corn sugar and 1/4 cup vodka which had been soaking the chile pepper. Bottled: April 2, 2006.
