Used a mesh steeping bag) :60 min. 1 oz Kent Goldings hop pellets (4.0% AAU) :05 min. Cooled to 78¡ F. Topped with water to 5 gallons. White Labs WLP028 Edinburgh Ale yeast (1 tube) 9 days in primary. Racked to secondary. Added three Santa Fe chiles, chipotle- smoked over mesquite, and one smoked Scotch Bonnet chile, sanitzed by soaking in vodka. 2 weeks in secondary. Primed with 2/3 cup corn sugar and 4 oz. of the chile- soaked vodka O.G. 1.060 F.G. 1.015 Est. abv: 6.1%
