Vanya Porter Brewed on Father's Day (6/20/04) by Mark McDermott (Vanya's new Daddy). Grains: 1 lb. 20¡ Lovibond Crystal Malt 1 lb. 60¡ L Crystal Malt 1 lb. Chocolate Malt Steeped in 3 quarts of water at 150¡ F for 40 minutes, sparged with 1 gallon pre-boiled water. Added water to bring to about 3 gallons. 6 lb. Light DME Brought to a boil. Hops: .5 oz. Eroica pellets (9.5% AAU) (:60) .7 oz. Northern Brewer whole hops (homegrown) (:60) 1 oz. Sterling leaf hops (7.1% AAU) (:10) 1 oz. Sterling (:02) Cooled, water added to 5 gal. Yeast: Wyeast #1028 -- London Ale Primary fermentation: 10 days Secondary: 17 days Bottled 7/17/04 O.G.: 1.057 F.G.: 1.012 5.9% ABV Notes: This was my first time brewing with DME instead of liquid extract, and I did all right. I attempted a concentrated boil of only 3 gallons to cut my kettle and cooling time. One thing I learned is if you're setting aside some pre-boiled water, make sure you have plenty to top off your brew at the end. Clearly I could've used tap water for anything before the boil. I get good aeartion using the sink sprayer, but that can be a germ repository. The taste came out much hoppier than I would have thought. I wanted the same porter I made as the base for my Mole Porter Chile Beer, but didn't have the same grain bill.
